CHIANTI DOCG

 

Tipology: Chianti DOCG red wine
Area of production: Toscana – Siena
Grape varieties: Sangiovese, Canaiolo & other native grapes
Colour: bright red tending to garnet with age
Bouquet: intense, fruity with austere flavour, full bodied, savoury, slightly tannic refining to smooth & velvety with time
Alcohol: 11,5% - 12,5%
Winemaking techniques: traditional with refinement in bottle for 3 months
Gastronomy: this wine goes well with roast game, red meat & spicy cheeses, pasta & “risotto” with meat sauce. Serve at 14°/16° C.

 

 

CHIANTI CLASSICO

 

Tipology: Chianti Classico DOCG red wine.
Area of production: Toscana – Siena & Firenze
Grape varieties: selected Sangiovese grapes
Colour: deep, clear ruby red tending to garnet with age
Bouquet: intense with light aroma of “mammola” violet, complete, elegant & penetrating. The flavour is harmonic, dry, full & slightly tannic refining to smooth & velvety with time
Alcohol: 12% - 13%
Winemaking techniques: temperature controlled maceration on skins ageing in oak barrels & in other noble woods & refinement in bottle. To obtain the “riserva” quality, Chianti Classico requires more years of ageing & a higher alcohol content of 12,5%
Gastronomy: this wine goes well with noble & common game, red meat & spicy mature cheeses, excellent with mushroom pasta & “risotto”, roast meat, stewed meat 6 chestnuts. Serve at a temperature of 18°/20° C.

 

 

CHIANTI CLASSICO RISERVA

 
Tipology: Chianti Classico DOCG red wine.
Area of production: Toscana – Siena & Firenze

Area of production: Toscana – Siena
Grape varieties: selected Sangiovese & Merlot grapes
Colour: deep ruby red
Bouquet: rounded, complete & elegant, with a dry, full & smooth flavour
Alcohol: 12,5% - 13,5%
Winemaking techniques: temperature controlled maceration on skins with ageing for a long period in oak barrels ( htl 50) & in oaok barriques (htl 2,5) with refinement in bottle for at least 6 months
Gastronomy: the prime quality & structure of this wine demand excellent first courses & “risotto” with game sauces, red meat, roast & spicy mature cheeses. Serve at a temperature of 18° - 20° C, allowing the wine to breathe before pouring

 

 

VINO ROSSO DA TAVOLA

 
Tipology: RED & WHITE WINE FOR TABLE
Grape varieties: selected of local tuscan grapes
Alcohol: 11,50 %
Gastronomy: wines for everydays, good with hors d’oeuvre, chees, vegetables. The red one is good with red meat, the white wine with delicate first course & fish dish.

Colour: straw yellow tending to golden with age
Bouquet: fine & penetrating, fresc & fruity with a characteristic bitterish aftertaste
Alcohol: 11,5% - 12,5%
Winemaking techniques: off skins with soft pressing of the grapes with temperature controlled fermentation
Gastronomy: an excellent wine with fish hors d’oeuvres, crustaceans & shellfish & all the types of fish, white meat, delicate red meat, “carpaccio” & rabbit. Serve at a temperature of 12°-14° C

 

 

NOBILE DI MONTEPULCIANO

 

VINO NOBILE DI MONTEPULCIANO DOCG

Tipology: Vino Nobile di Montepulciano DOCG red wine
Area of production: Toscana – Montepulciano (Si)
Grape varieties: selected Sangiovese Grosso grapes
Colour: intense ruby red
Bouquet: rounded, complete & elegant, with a dry, full & smooth flavour
Alcohol: 12,5% - 13,5%
Winemaking techniques: temperature controlled maceration on skins in oak barrels for a minimum of 2 years followed by refinement in bottle for 6 months
Gastronomy: the prime quality & structure of this wine demand important red meat dishes & it is also excellent with mature cheeses. Serve at a temperature of 18° - 20° C, allowing the wine to breathe before pouring

 

 

ROSSO DI MONTALCINO

 
Tipology: Rosso di Montalcino DOC
Area of production: Toscana – Montalcino (Siena)
Grape varieties: the wine is made from Sangiovese “Brunello” grapes, harvested by hand
Colour: intense ruby red
Bouquet: persistent & expressing a characteristic scent of forest fruits. Its flavour is warm & dry, with an evident chasacter; calm & aristocratic hints of wood can be perceived among the typical herbaceous notes
Winemaking techniques: the wine obtained is aged for a years in oak barrels with refined in the bottle for about 3 months
Alcohol: 12,5% – 13,5%
Gastronomy: the prime quality & structure of this wine demand first course of pasta & “risotto” with wild boar & meat sauce, main courses of roast noble common game & mature cheeses.
Serve at a temperature of 18°/20°, allowing the wine to breathe before pouring

 

 

BRUNELLO DI MONTALCINO DOCG

 
Tipology: Brunello di Montalcino DOCG
Area of production: Toscana – Montalcino (Siena)
Grape varieties: this wine is made exclusively from Sangiovese Grosso grapes, called “Brunello”
Colour: deep ruby red, tending to garnet with age
Bouquet: characteristic, intense, with a rich & elegant bouquet composed of violet & forest fruit scents. It has a strong personality with a dry, full, smooth & balanced flavour
Winemaking techniques: the wine obtained is subjected to an ageing period of at least 4 years in oak barrels & at least 12 month in the bottle
Alcohol: 13%
Gastronomy: excellent with pasta dishes with wild board & meat sauces, with tasty noble game roasts & poultry. Excellent with the mature & spicy cheeses.
Serve at a temperature of 18°/20°, allowing the wine to breathe before pouring

 

 

VIN SANTO DEL CHIANTI

 
Tipology: VIN SANTO DEL CHIANTI – wine for dessert
This wine is obtained from the off skins fermantation of aged wines in tipical small barrel called “caratello” for tree years
Area of production: Toscana – Chianti shire
Alcohol: 16%
Gastronomy: an excellent dessert wine, especially suitable with all types of sweets & biscuits. Exceptional with tuscan “cantuccini”, chocolate filled biscuits & cream cakes. Serve at a temperature of 14° - 16° C in wine glasses with wide base & tall stem

 

 

GRAPPA

 
Tipology: GRAPPA DI VERNACCIA DI SAN GIMIGNANO
Area of production: Toscana – San Gimignano (Si)
Grappa produced from the artisan distillation of the marc of Vernaccia di San Gimignano, immediately following separation from the must by soft pressing. The grappa obtained maintains all the primary aromas of the grapes ehich are generously passed on the grappa.
Alcohol: 43%
Gastronomy: this is a delicate white grappa which can be served at room temperature or slightly chilled with desserts or at the end of the evening. Serving at a temperature of 10° - 12° C in small cristall, tulip- shaped glasses

 

 

OLIO EXTRAVERGINE DI OLIVA

 
Tipology: OLIO EXTRAVERGINE DI OLIVA
Area of production: Toscana – San Gimignano (Si)
“Extra vergine “ is for the olive oil the best indication of the quality & it is the guarantee of an oil produced from the first pressing. Our olive oil are produced by handharvested olives in the lands of San Gimignano & cold-pressing for the past two days the harvesting
Characteristics: color intense green, taste spicy.
Gastronomy: this oil is used like seasoning, rice, soups, fish, crustaceans, meats but it’s excellent also with roast bread
